Black bean burgers

4 oz Neliquick black bean powder with whole beans

2 cups cooked quinoa

1 medium onion, minced

1 cup red pepper, cubed

2 garlic cloves, minced

½ cup Brazil nuts

¼ cup gluten free Panko bread crumbs

1 egg, beaten

2 tbsp chopped parsley

½ tsp chili flakes

½ tsp smoked paprika

½ tsp cumin

3 tbsp olive oil

salt, black pepper to taste

3 cups of water

 Preparation: 1)  In a medium pan heat 1 tblsp  olive oil over medium heat, then add onion and red pepper and cook for 2-3 minutes. Stir in the garlic and cook for 30 sec. Set aside. 2) In a heavy bottom pot put the black beans and 3 cups of water. Mix well to combine.  Let boil for 20 minutes until the mixture become thick. Remove from the heat and set aside. 3) Place the Brazil nuts in a food processor and pulse until finely chopped. 4) In a large bowl add the onion-red pepper mixture, Brazil nuts,  black beans mixture, Panko, quinoa, beaten egg, parsley and spices. Season to taste  and mix well. 5) Divide the mixture into 4 balls. Form the burgers with wet hands and place them on a lightly floured surface. 6)  Heat the remaining olive oil in a large cast iron pan over medium heat and cook the burgers for 4 minutes on each side.
